Q. How was the business in 2008?

A. Business in 2008 was down a little. Being in Steveston, the tourist trade wasn’t quite as strong as last year. We are very fortunate to have a great regular customer following and that kept us going. Things did pick up around Christmas and December was one of our better months.

Q. What was your most frequently ordered dish in 2008?

A. I think that’s a toss up, probably our Pointed N.Y. steak. ‘AAA’ Alberta beef, topped with a black balsamic reduction and goat cheese. It’s wonderful!

Q. Are you participating in the "Dine Out Vancouver 2009" event?

A. Yes, this is our first year in D.O.V. So far the response has been fantastic. I think we are completely booked out on a few nights. For our menu we wanted to feature our regular menu items, we have only been open for just over a year, so this is our chance to show case the restaurant.

Q. Any special plan for 2009?

A. Yes, in 2009 we will continue with the "Dine Out" mojo. Every Saturday night features a three course meal from 25-35 dollars per person. Later in the spring Friday nights will be "Tapas Night" with live entertainment and some great small plates and cocktail specials.

Q. What is your recommendation?! From your menu, of course!

A. That’s a tough one, I’m going to go with our Pacific Tapas Platter just because it has a combination of tapas. Crab cakes, Thai Prawns, Yellow fin tuna carpaccio and our west coast salad. Combine that with a bottle of Sandhill Pinot Blanc and your golden.

Goldfish Pacific Kitchen is located in the Yaletown neighborhood, and offers a modern atmosphere, tasty food, and novel cocktails. This is an interview with Andrea Maglajlija, the marketing manager for Goldfish Pacific Kitchen and Joe Fortes Seafood and Chop House.

Q. How did you do in 2008?

A. 2008 was a great year for Goldfish.  We have been honored with the 2008 Wine Enthusiast Award of Unique Distinction as well as Wine Spectator’s 2008 Award of Excellence.  We have quite the neighborhood following.  Goldfishers love our contemporary, sophisticated setting and the seafood-focused clean, fresh-flavoured dishes.

Q. What was your most popular dish in 2008?

A. Our most popular dish of 2008 was the miso sake sablefish with sautéed gai lan and lemongrass broth.  The texture of sablefish melds very well with the flavors of miso and sake; this combined with the lemongrass broth creates a great balance of flavors. 

Q. Are you taking part in the "Dine Out Vancouver 2009" event? If yes, please give us a scoop of your special menu for the event?

A. Yes, we are always happy to participate in Dine Out – it’s an opportunity to offer something different to our guests and at a great value.  This year we are doing a $38 three course menu with items such as sugar cane skewered prawns (appetizer), duck breast with mushroom thyme risotto (entrée) and warm spiced pear crumble streusel topping, pear sorbet (dessert).  We also have a Wine Out Vancouver promotion on Sundays and Mondays, with special pricing on most of the wines from our regular wine list. 

Q. Any special plan for 2009?

The Goldfish experience is uncomplicated and uncommon.  We strive to provide our guests with a distinctive menu, lots of variety, superb service and highest quality product at a reasonable price.  That’s our bottom line. We will continue to listen to our guests and keep things exciting with new menu items, interesting cocktails, fun events and unique value based menu promotions.  You’ll have to keep checking our website and our facebook page for news!  

Q. What is your recommendation?! From your menu, of course! 

A. Hmmmm, that’s a tough one…I love our JASMINE TEA SMOKED LING COD with edamame bean & mushroom ragout.

Cassis Bistro is often called the “Hidden Gem of Vancouver”. It is well-known for offering delicious organic food, innovative cocktails, all in a relaxing ambiance. Q. How was your business in 2008?

A. Business was good.  We’re still here, aren’t we?  We did have some rough stints but we quickly picked back up.  We are tremendously grateful for the loyal regulars, and free press that has given us genuine word-of-mouth exposure and praises.

Q. What was your most favorite dish in 2008?

A. Daube De Boeuf is arguably the favourite.

Q. Are you going to take part in the “Dine Out Vancouver 2009”?

A. Yes, we are taking part of DOV 09.  Everybody should enjoy get a chance to enjoy real French comfort food.  These dishes have been favourites long before fancy stacks and questionable pairing was cool, and will continue to be way after.

Q. Plans for 2009?

A. We always have something special going every year (from special events to fun lessons).  We really enjoy being a part of the community.  Interested?  Join our mail list on our website or in person.

Q. What is your recommendation?! From your menu, of course!

A. Those new to Cassis I would recommend the, Daube.  However, we have a new Beef Rib. It’s Sous-vided for many hours at low temperature. — You’ve probably never had anything like it.

Fuel Restaurant in Vancouver

Fuel Restaurant is one of the relatively new restaurants in Vancouver, and has succeeded in many ways in a fairly short time. It offers a fine dining experience in a comfortable atmosphere. They are located on the West 4th Avenue. Reservation is recommended. Call them at 604-288-7905. Lunch is served Monday to Friday from 12:00 pm to 2:30 pm, and dinner is served everynight from 5:30 pm. Here is our interview with Mr. Tom Doughty, the proprietor of the Fuel Restaurant and Campagnolo Restaurant:

Q. How was the business in 2008?

A. 2008 was our best year yet. Of course we opened in 2007 so it was also our second year! Things did slow down considerably towards the end of September but our belief is that we serve quality ingredients at fair prices with great service and atmosphere and there will always be a market for that.

Q. What was your most frequently ordered dish in 2008?

A. Probably our 12oz 35-day dry aged Alberta Prime Ribeye, currently being served with a spinach and mushroom gratin, sautéed german butter potatoes, sauce béarnaise and veal jus. Pretty decadent dish all for $35.00 which would only get you the protein at most steak houses.

Q. Are you planning to take part in the "Dine Out Vancouver 2009" event?

A. We are not participating in Dine-Out Vancouver. Over the time we have been open, we have built up a large clientele of regulars who simply asked us to stay as we were during the period so we are listening to them and having regular service for those who wish to enjoy a relaxed evening.

Q. Any special plan for 2009?

A. We have just opened Campagnolo, our new Italian restaurant, so that will be taking up much of our time but Fuel will continue to focus on our whole roast options and table designed tasting menus with wine pairings.

Q. What is your recommendation?!

A. My recommendation would be to have one person join you for the Whole Confit Polderside Farms Duck. We brine it overnight, confit it for 24 hours sous-vide, let it rest in its own fat for 3 more days in the refrigerator and then warm it up sous-vide, dust if with seasoned flour and submerge it in the deep fryer so as to crisp up every millimeter of skin. Many guests have pronounced it the best prepared duck they have ever tasted.

Interview with the Director of Sales & Marketing of C Restaurant

C Restaurant Vancouver

C Restaurant is one of the most successful restaurants in Vancouver. It is located at 2-1600 Howe Street, and you can make a reservation online or calling 604.681.1164. This is an interview with their director of Sales and Marketing, Curtis Wong.

Q: How was the business in 2008?

A: This is always a subjective question…I am new to the company in a newly created role so I have no hands on experience within this company to reflect previous years.

From pure observation, I am sure you can imagine the economy has made things very challenging. Further, as a weather driven restaurant, summer was quite brief this year making business more important to secure.

With a focus on corporate groups, C did well, but in all answers…all things considered, there were definitely need periods.

Q: What was your most frequently ordered dish in 2008?

A: This is really a question for Chef…

The Octopus bacon wrapped scallops are always popular, but our Chef de Cuisine recently won a contest for his Clam Chowder and it has been doing quite well.

Q: Are you planning to take part in the “Dine Out Vancouver 2009” event? If yes, please give us a scoop of your special menu for the event?

A: Yes we are…maybe not special menu, but I can say that if you would like to join us a week before for a preview, we will be honouring it at last year’s prices.

Q: Any special plan for 2009?

A: Uncertain of the specifics of this question and my answer may not be the perspective you are looking for…but marketing wise, we will focus on our online presence.

C will continue to push the envelope on cutting edge seafood.

Q: What is your recommendation?! From your menu, of course!

A: Chef’s clam chowder…it’s still cold out and it is tasty and comfort food.

Dining Out On The Christmas Day!

It is not very common, but there are several reasons that someone may want to spend the Christmas Day, not at their home, but in a restaurant. Especially in a city like Vancouver. They are singletons away from family, people who were sick of working hard in the kitchen (who cannot understand them?!), and many of Hindu, Sikh, and Muslim residents of the Greater Vancouver.

But it seems finding restaurants that are open on Christmas Day is an impossible mission. Just pick up your phone and call a random restaurant of your choice. Most probably, they will proudly announce that they would be closed. But of course, there are exceptions. If you are interested in knowing these restaurants, check this article.
